  • Red and blue food gel

  • 113g mascarpone cheese (cold)
  • 50g granulated sugar

Instructions

  2. Sift almond flour and powdered sugar twice.
  3. Whisk egg whites and granulated sugar over simmering water until dissolved.
  4. Beat meringue until stiff peaks form; divide into two bowls, adding food gels.
  5. Fold in dry ingredients gently until combined.
  6. Pipe batter onto prepared template; let rest until dry to the touch.
  7. Preheat oven to 300°F; bake for 12-14 minutes and cool completely.
  8. For frosting, mix heavy cream, mascarpone, and sugar until stiff peaks form.
