  • 4 lamb shanks
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • 4 sprigs fresh thyme
  • 2 sprigs rosemary

Instructions

  1. Season lamb shanks generously with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the shanks on all sides until browned. Remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Add tomato paste; stir well and cook for an additional minute.
  4. Deglaze with apple vinegar, scraping up browned bits from the pot.
  5. Return lamb shanks to pot, add beef stock, thyme, and rosemary; bring to a simmer.
  6. Cover and reduce heat to low; slow-cook for 2-3 hours until fork-tender.
