Ingredients

  • 130 g dried apricots
  • 170 g plain flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 40 g sugar
  • 60 g cold butter
  • 50 g flaked almonds
  • 6080 ml milk or yogurt
  • 1 egg
  • 1 tsp almond extract

Instructions

  1. Soak dried apricots in boiling water for 30 minutes; drain and chop.
  2. In a large bowl, mix flour, baking powder, salt, and sugar.
  3. Grate in cold butter and rub into the flour until crumbly.
  4. Stir in flaked almonds and chopped apricots.
  5. Whisk together milk (or yogurt), egg, and almond extract; add to dry ingredients.
  6. Fold gently until just combined; do not overmix.
  7. Shape dough into a circle on a floured surface; freeze for at least 30 minutes.
  8. Preheat oven to 200°C (180°C fan).
  9. Cut dough into triangles and bake on parchment-lined tray for 18–25 minutes until golden.
  10. Cool completely before drizzling with icing made from sifted icing sugar and soaking water.
