  • 2 cans (15 oz each) apricot halves
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 2/3 cup cake flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Let egg whites stand at room temperature for 30 minutes. Drain apricots, reserving 3 tablespoons of syrup.
  2. Melt butter in a 9-inch square baking dish in the oven. Sprinkle with brown sugar and arrange apricot halves cut-side up.
  3. In a small bowl, whisk together cake flour, baking powder, and salt. Beat egg yolks in a larger bowl until thick; gradually add sugar and reserved apricot syrup. Fold in flour mixture.
  4. Beat egg whites until stiff peaks form and fold into batter. Spoon over arranged apricots.
  5. Bake for 35-40 minutes until a toothpick comes out clean. Cool for 10 minutes before inverting onto a plate.
