  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced
  • 10 cups water
  • 8 oz dried ramen noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot over medium heat, add sesame oil, then sauté garlic, ginger, and white parts of scallions until fragrant.
  3. Add the seasoned chicken thighs and water; bring to a boil. Reduce heat and simmer for 15 minutes until the chicken is cooked through.
  4. Remove the chicken to shred after cooling slightly. Add ramen noodles and carrots to the pot; cook according to noodle package instructions.
  5. Return shredded chicken to the pot, stir in black rice vinegar, soy sauce, and remaining sesame oil. Adjust seasoning if needed.
  6. Serve hot, garnished with green scallions and crispy chili oil if desired.
