Ingredients
- 2 medium eggplants
- ¼ cup tahini
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves
- ½ teaspoon sea salt
Instructions
- Preheat your oven to 400°F (200°C). Wrap the pierced eggplants in aluminum foil.
- Roast the eggplants for about 50 to 60 minutes until soft. Allow them to cool.
- Peel the skin off the cooled eggplants and strain the flesh over a bowl to remove excess moisture for about 20 minutes.
- In a food processor, blend the strained eggplant flesh, tahini, lemon juice, olive oil, garlic, and sea salt until smooth.
- Transfer to a serving dish and garnish with parsley, smoked paprika, and red pepper flakes if desired. Serve with pita bread or fresh veggies.
