- 1 small eggplant, sliced into rounds
- 1 medium zucchini, sliced into rounds
- 1 medium yellow squash, sliced into rounds
- 3 Roma tomatoes, sliced into rounds
Instructions
- In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Sauté chopped onion and diced bell pepper until tender (about 8 minutes). Add minced garlic and cook for another minute.
- Stir in canned tomatoes with salt and 1 teaspoon of Italian seasoning. Simmer for about 10 minutes; let cool slightly.
- Blend the sauce until smooth and pour it into a baking pan or oven-safe skillet.
- Layer the sliced vegetables over the sauce in a spiral pattern.
- Drizzle remaining olive oil on top and sprinkle with the rest of the Italian seasoning. Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover and bake for an additional 15–30 minutes until vegetables are soft and edges are golden brown.
