  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup dark brown sugar (packed)
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • 3 oz dark chocolate bar (chopped)

Instructions

  1. In a medium bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch; set aside.
  2. In a stand mixer with the paddle attachment, beat unsalted butter with granulated sugar and brown sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the egg, egg yolk, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet mixture; mix on low speed until just combined.
  5. Gently fold in chocolate chips and chopped chocolate bar using a spatula.
  6. Chill dough in the refrigerator for at least one hour or up to 24 hours.
  7. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  8. Scoop large dough balls (about 1/3 cup each) onto prepared sheet about three inches apart.
  9. Bake for 15-18 minutes or until edges are set but centers look slightly underbaked.
