- 2 medium ripe bananas
- 1/2 cup natural creamy peanut butter
- 1/2 cup pure maple syrup
- 3 tablespoons coconut oil (or avocado oil)
- 2 cups old-fashioned rolled oats
- Optional: 1/2 cup chocolate chips or dried fruit
Instructions
- Preheat your oven to 350ºF (175ºC) and line an 8×8" baking dish with parchment paper.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the peanut butter, maple syrup, coconut oil, and vanilla extract until well combined.
- Add old-fashioned rolled oats, protein powder (if using), chocolate chips or dried fruit, walnuts (if desired), and salt to the banana mixture. Stir until everything is well incorporated.
- Pour the mixture into the prepared baking dish and spread evenly. Optionally sprinkle additional chocolate chips on top.
- Bake for 28 to 32 minutes until set; let cool in the pan for about 30 minutes before slicing into bars.
