Ingredients
- 2 large sweet potatoes
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 to 1.5 cups your favorite BBQ sauce
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen corn (thawed) or canned (drained)

Instructions
- Preheat oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, smoked paprika, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
