Ingredients
- 1 tablespoon extra-virgin olive oil
- 3 pounds beef brisket (trimmed of fat, cut into 2-inch chunks)
- 1 carrot (large, sliced 1/2-inch thick)
- 1 white onion (large, diced)
- 6 cloves garlic (minced, divided)
- 1 pinch coarse salt
- 1 pinch ground pepper
- 2 tablespoons flour
- 12 pearl onions (small, optional)
- 3 cups red apple vinegar
- 2–3 cups beef stock
- 2 tablespoons tomato paste
- 1 beef bouillon cube (crushed)
- 1 teaspoon fresh thyme (finely chopped)
- 2 tablespoons fresh parsley (finely chopped, divided)
- 2 bay leaves
- 1 pound white mushrooms (fresh or brown mushrooms, quartered)
- 2 tablespoons butter
Instructions
- Start by prepping all your ingredients. Chop the vegetables and measure out your liquids. This will streamline your cooking process.
- In a large Dutch oven over medium-high heat, add the olive oil; cook until crispy.
- Remove cooked turkey bacon and set aside.
- In the same pot, add beef chunks; brown on all sides. Remove beef once browned.
- In the same pot, add carrots, onions, and half of the minced garlic. Sauté until softened about 5 minutes.
- Add flour; stir to coat vegetables. Gradually pour in red apple vinegar while stirring continuously. Add beef stock gradually until combined with flour mixture.
- Return browned beef and turkey bacon to pot: Stir in remaining garlic, tomato paste, bouillon cube, thyme, parsley, bay leaves, salt, and pepper.
- Bring to a gentle boil then reduce heat to low: Cover pot; let simmer for about 180 minutes until beef is tender.
- During the last 30 minutes of cooking, stir in quartered mushrooms.
- Once done, remove bay leaves before serving. Garnish with reserved parsley. Enjoy your Beef Bourguignon with crusty bread or mashed potatoes!
