Ingredients
- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, peeled and sliced
- 2 medium potatoes, peeled and cubed
- 4 cups beef broth
- 1 cup apple vinegar (optional)
- 1 bay leaf
- 1 tsp dried thyme
Instructions
- Heat olive oil in a heavy pot over medium-high heat. Add cubed beef and sear until browned on all sides (about 5-7 minutes). Remove beef from pot and set aside.
- In the same pot, add diced onion and minced garlic; sauté until softened (around 3-4 minutes). Then add sliced carrots and cubed potatoes; stir well.
- Return seared beef to the pot, pour in beef broth and apple vinegar (if using), add bay leaf and thyme. Bring to a boil then reduce heat to low.
- Cover and simmer for about 1 to 1.5 hours until beef is tender, stirring occasionally.
- While stew simmers, prepare bread bowls by preheating the oven according to instructions and hollowing out the bread.
- Remove bay leaf from stew and ladle into bread bowls to serve hot.
