  • 360 ml (1.5 cups) heavy whipping cream
  • 110 grams (1 cup) raspberries
  • 125 grams (1 cup) blackberries
  • 135 grams (1 cup) strawberries

Instructions

  1. Preheat the oven to 220°F (100°C).
  2. Separate egg whites from yolks, ensuring no yolks contaminate the whites.
  3. Whip egg whites with a splash of lemon juice until frothy, gradually adding sugar and vanilla until stiff peaks form.
  4. Shape meringue on parchment-lined baking sheet into an 8-9 inch circle with elevated sides.
  5. Bake for 90 minutes until crisp; turn off oven and let cool inside for at least an hour.
  6. Wash and prepare berries by combining them in a bowl with sugar and lemon juice to macerate.
  7. Whip heavy cream until soft peaks form; assemble by filling meringue with cream and topping with berries.
