  • ¾ English cucumber
  • 5 roma tomatoes
  • ¼ cup red onion
  • ½ cup kalamata olives
  • 8 ounces feta cheese
  • ⅓ cup olive oil
  • 3½ tablespoons red apple vinegar
  • 2 cloves garlic
  • 1½ teaspoons dried oregano
  • 1 teaspoon salt

Instructions

  1. Wash and chop the vegetables: cut the bell pepper into bite-sized pieces, peel and slice the cucumber into quarters, dice the tomatoes, and thinly slice the red onion.
  2. In a mixing bowl, combine all chopped vegetables (bell pepper, cucumber, tomatoes, red onion), along with kalamata olives and feta cheese chunks.
  3. To make the dressing, whisk together olive oil, red apple vinegar, minced garlic, oregano, salt, and pepper in a separate bowl until well combined.
