  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar (or alternative sweetener)
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, beat egg whites until frothy; gradually add granulated sugar until stiff peaks form. Fold in cornstarch, lemon juice, and food coloring.
  3. Pipe or spoon meringue onto the baking sheet; bake for about 60 minutes until crisp outside. Leave in the oven to cool.
  4. Prepare blackberry filling by cooking blackberries, sugar, lemon juice, cornstarch, and water in a saucepan until thickened.
  5. Whip the cream with powdered sugar and vanilla until soft peaks form.
  6. Assemble by filling cooled meringue shells with blackberry mixture and topping with whipped cream.
