  • 1011 strips chicken (cooked)
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup sunflower seeds (roasted and salted)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion (or more to taste)
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook chicken until fully done; chop into bite-sized pieces once cooled.
  2. In a large bowl, whisk together Miracle Whip (or mayonnaise), lemon zest/juice, white grape juice vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper.
  3. Chop broccoli into florets and add to the dressing.
  4. Mix in cranberries, sunflower seeds, cheddar cheese, and most of the chicken.
  5. Serve chilled or at room temperature.
