Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz rotini pasta
- 4 cloves garlic
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese
- 1 cup shredded mozzarella cheese
- Cajun seasoning
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and black pepper, to taste
Instructions
- 1. Cook rotini pasta according to package instructions until al dente. Reserve some pasta water and drain.
- 2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear in a skillet until golden-brown and cooked through. Set aside.
- 3. In the same skillet, sauté minced garlic before adding heavy cream and milk. Stir in Velveeta until melted and smooth.
- 4. Add mozzarella and Parmesan cheeses until thickened. Combine with rotini and chicken.
