- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese

- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes (optional)
- 2 large eggs
- ¼ cup breadcrumbs
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Sauté chopped onion in olive oil until translucent, then add minced garlic and cook another minute.
- Gradually add spinach, cooking until wilted. Drain excess liquid and let cool.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs.
- Fold the cooled spinach mixture into the cheese mixture and transfer to the baking dish.
- Sprinkle breadcrumbs on top for an extra crunch.
- Bake for 25–30 minutes until golden brown and bubbly.
