  • 1 lb grape tomatoes
  • 1 Tbsp olive oil
  • 1 (8 oz) package mozzarella balls (drained)
  • 2 cups fresh basil leaves (for pesto)
  • 3 Tbsp parmesan cheese (for pesto)
  • 3 Tbsp balsamic glaze

Instructions

  1. If using wooden skewers, soak them in water for at least 1 hour.
  2. Preheat the grill to medium-high heat (around 425°F).
  3. Assemble skewers by threading chicken pieces and cherry tomatoes, alternating as you go.
  4. Brush the skewers with olive oil and season generously with salt and pepper.
  5. Grill the kebabs for about 4-6 minutes per side until the internal temperature reaches 165°F.
  6. Prepare the pesto by blending basil leaves, parmesan, pine nuts, garlic, and olive oil until smooth.
  7. Once grilled, drizzle skewers with homemade pesto and balsamic glaze before serving.
