  • 1 lb ground chicken
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, finely chopped
  • 2 tbsp chopped cilantro
  • 1 tsp soy sauce
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder
  • Coconut milk (or broth)

Instructions

  1. In a mixing bowl, combine the ground chicken, minced garlic, grated ginger, chopped green onions, chopped cilantro, soy sauce, breadcrumbs, egg, salt, and pepper. Mix gently until combined and form into 1-inch meatballs.
  2. Heat vegetable oil in a skillet over medium heat. Cook meatballs in batches for 6-8 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic briefly before adding Thai red curry paste and turmeric powder. Stir in coconut milk to create a silky sauce.
  4. Return meatballs to the skillet and simmer for 5 minutes to meld flavors.
