Ingredients
- 2 boneless, skinless chicken breasts
- 4 tbsp olive oil (divided)
- 2 medium sweet potatoes, sliced
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
- 2 cups broccoli florets
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potato slices in 2 tbsp olive oil, salt, and optional spices. Spread on a baking sheet and roast for about 25–30 minutes, flipping halfway.
- While potatoes roast, rub chicken breasts with remaining olive oil, garlic powder, paprika, salt, and pepper. Grill or sear over medium-high heat until golden brown and cooked through (165°F/74°C), about 6–8 minutes per side. Let rest before slicing.
- Steam broccoli in a steamer basket over boiling water for about 5–6 minutes until tender; season lightly with salt.
- Assemble meal prep containers by layering sliced chicken, roasted sweet potatoes, and steamed broccoli. Cool completely before sealing in the fridge.
