  • 2 tablespoons extra virgin olive oil
  • 1 large onion, finely chopped
  • 45 cloves garlic, minced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup vegetable broth
  • 1 (28-ounce) can crushed tomatoes
  • 5 ounces fresh baby spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve about 1.5 cups of pasta water before draining.
  2. In a deep skillet, heat olive oil over medium heat. Sauté onion for 5-7 minutes until softened. Add minced garlic, oregano, and red pepper flakes; cook until fragrant.
  3. Deglaze the pan with vegetable broth and simmer until reduced by half.
  4. Stir in chickpeas and crushed tomatoes along with sugar, salt, and pepper. Let simmer for at least 10-15 minutes.
  5. Add spinach gradually until wilted. Mix in the cooked pasta.
  6. Stir in grated Parmesan cheese and reserved pasta water; adjust texture as necessary.
  7. Serve hot garnished with additional cheese and fresh herbs.
