  • 22.5 lbs deboned skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 1 teaspoon fresh lime zest
  • 1/4 cup olive oil
  • 3 tablespoons fresh cilantro leaves
  • 1 jalapeño (finely chopped)
  • 2 teaspoons chipotle chili powder
  • 5 cloves garlic (minced)
  • 1 1/2 tablespoons honey
  • 2 teaspoons salt

Instructions

  1. Prepare the chicken by making slits along the bone and removing it, then rinse and pat dry.
  2. In a mixing bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle powder, garlic, honey, and salt until well combined. Reserve some marinade for basting.
