Ingredients
- 3 boneless skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoon butter
- 1/4 cup pure maple syrup
- 1/4 cup orange juice
- 1/4 cup apricot preserves
- 2 tablespoons balsamic vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 – 1 1/2 teaspoons chipotle chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon oregano
- 1/4 teaspoon pepper
- 1 teaspoon orange zest
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a medium bowl, whisk together marinade ingredients (maple syrup, orange juice, olive oil, spices). Reserve some for glazing.
- Marinate chicken in a large freezer bag with half the marinade for 2 to 6 hours.
- Preheat grill or skillet over medium heat. Drain chicken and pat dry.
- Grill chicken for about 3-4 minutes on each side until internal temperature reaches 165°F.
- While grilling, prepare the glaze by simmering reserved marinade with cornstarch and water until thickened.
