Ingredients
- 1 red bell pepper, diced
- 1 cup shredded carrots
- 1/2 small head of red cabbage, chopped
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1/2 cup cilantro, finely chopped
- 1/4 cup green onion, finely chopped
- 1 jalapeño, seeded and diced
- 1/4 cup peanut butter
- 1 tablespoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon lime juice or rice vinegar
- 2 tablespoons low sodium soy sauce or coconut aminos
- 1–2 teaspoons yellow curry powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced red bell pepper, shredded carrots, chopped cabbage, rinsed chickpeas, cilantro, green onion, and jalapeño.
- In a separate bowl, whisk together peanut butter, ginger, garlic, lime juice or vinegar, soy sauce or coconut aminos, curry powder, salt, and pepper until smooth.
- Gradually add warm water to the dressing until you achieve your desired consistency.
- Pour the dressing over the salad ingredients and toss well to combine.
- Garnish with extra cilantro and sliced green onion before serving.
