Ingredients
- 1 cup uncooked quinoa
- 1 can (15 oz) white beans, rinsed and drained
- ⅓ cup red onion, finely diced
- ½ cucumber, chopped
- ½ cup fresh cilantro
- 1 scallion
- 1–2 cloves garlic
- Juice and zest of two limes
- ¼ cup plain plant-based yogurt or olive oil
Instructions

- In a blender, combine cilantro, scallion, garlic, lime juice and zest, yogurt (or oil), coriander, vinegar, and maple syrup; blend until smooth.
- In a mixing bowl, combine cooled quinoa, white beans, red onion, and cucumber; toss gently.
- Pour dressing over the salad mixture; toss until evenly coated.
- Adjust seasoning with salt and pepper if needed; serve immediately or chill for enhanced flavors.
