  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • For the cinnamon swirl: 4 tablespoons melted vegan butter
  • ⅓ cup light brown sugar
  • 2 tablespoons cinnamon
  • For the frosting: ¾ cup powdered sugar
  • 2 tablespoons melted vegan butter
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well combined.
  3. Add baking powder, baking soda, cinnamon, salt, flour, and oats; stir until just mixed.
  4. Pour half of the batter into the prepared loaf pan. Mix together melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  5. Add remaining batter and top with the rest of the cinnamon mixture.
  6. Bake for 50-60 minutes or until a toothpick comes out clean from the center. Allow to cool before frosting with the mixture of powdered sugar, melted butter, and cream cheese.
