  • 200g crushed graham crackers
  • 60ml unsalted butter (melted)
  • 25g granulated sugar
  • 675g cream cheese (softened)
  • 200g granulated sugar
  • 120g sour cream
  • 110g brown sugar
  • 12g ground cinnamon
  • 3 large eggs
  • 60g powdered sugar
  • 30ml milk
  • 2.5ml vanilla extract

Instructions

  1. Preheat the oven to 163°C and grease a 23-cm springform pan.
  2. For the crust, mix crushed graham crackers, melted butter, and sugar; press into the pan and bake for 8-10 minutes until golden brown.
  3. In a bowl, combine brown sugar, cinnamon, and melted butter for the cinnamon swirl.
  4. Beat cream cheese with granulated sugar until smooth; add sour cream and vanilla. Mix in eggs one at a time.
  5. Layer half the cheesecake batter over the crust, add spoonfuls of cinnamon swirl, then repeat with remaining batter and swirl.
  6. Bake for 50-60 minutes until nearly set; cool in the oven with the door cracked open.
  7. Whisk together glaze ingredients; drizzle over chilled cheesecake before serving.
