  • 1 cup freshly grated zucchini (pressed)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 3 tablespoons melted butter
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with parchment paper or cooking spray.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, combine the sugar, eggs, vegetable oil, vanilla extract, and grated zucchini.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. In a small bowl, mix melted butter, sugar, and cinnamon to create the filling.
  6. Pour half of the batter into the prepared pan and add half of the cinnamon filling. Swirl gently with a knife. Add remaining batter and top with another swirl of filling.
  7. Bake for 45–55 minutes or until a toothpick comes out clean. Cool for 10 minutes before glazing.
  8. For glaze: Whisk powdered sugar and milk until smooth; drizzle over cooled bread.
