- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 4 oz turkey strips, chopped
- 28 oz can whole plum tomatoes
- Fresh basil
- 2 bay leaves
- 1 tbsp oregano
- 3/4 cups ditalini pasta
- 4 cups chicken broth
- 1 can cannellini beans
- Bag of spinach, chopped
- 2 tbsp olive oil
- 2 tbsp tomato paste
Instructions
- In a large Dutch oven, sauté turkey strips over medium heat until crispy. Stir in olive oil, carrots, celery, and onions; cook for about 10 minutes until softened.
- Create a well in the vegetables and add tomato paste to caramelize for 3 minutes before mixing.
- Pour in crushed tomatoes along with basil, bay leaves, and oregano. Bring to a simmer.
- Add chicken broth and parmesan rind; boil briefly then reduce to simmer for 15 minutes.
- Incorporate cannellini beans and ditalini pasta; simmer another 15 minutes until pasta is tender.
- Stir in spinach and cover for 3 minutes before serving. Remove bay leaves.
