  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 28 oz can whole plum tomatoes
  • Fresh basil
  • 2 bay leaves
  • 1 tbsp oregano
  • 3/4 cups ditalini pasta
  • 4 cups chicken broth
  • 1 can cannellini beans
  • Bag of spinach, chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato paste

Instructions

  1. In a large Dutch oven, sauté turkey strips over medium heat until crispy. Stir in olive oil, carrots, celery, and onions; cook for about 10 minutes until softened.
  2. Create a well in the vegetables and add tomato paste to caramelize for 3 minutes before mixing.
  3. Pour in crushed tomatoes along with basil, bay leaves, and oregano. Bring to a simmer.
  4. Add chicken broth and parmesan rind; boil briefly then reduce to simmer for 15 minutes.
  5. Incorporate cannellini beans and ditalini pasta; simmer another 15 minutes until pasta is tender.
  6. Stir in spinach and cover for 3 minutes before serving. Remove bay leaves.
