  • 2.5 lbs beef chuck or stew meat, cut into large chunks
  • 2 Tbsp coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey

Instructions

  1. Heat coconut oil in a heavy-bottom pot over medium-high heat.
  2. Sear beef chunks until browned on all sides; remove and set aside.
  3. In the same pot, sauté onion until soft, then add garlic and ginger for an additional minute.
  4. Stir in red curry paste, cumin, turmeric, and cinnamon; cook for another minute.
  5. Return beef to the pot along with coconut milk and broth. Add tomato paste and brown sugar; mix well.
  6. Bring to a simmer, reduce heat to low, cover slightly ajar, and braise for 2-3 hours until beef is tender.
