Ingredients

  • 1 cup broccoli florets
  • 1 medium zucchini, sliced
  • 1 cup cauliflower florets
  • 1 medium carrot, sliced into rounds
  • 1 handful kale or spinach, chopped
  • 1 tbsp olive oil
  • 1 garlic clove, minced (optional)
  • Salt & pepper to taste
  • Splash of water (for steaming)

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat. If using garlic, add and sauté until fragrant (about 30 seconds).
  2. Add broccoli, cauliflower, carrots, and zucchini to the skillet. Stir frequently for 5-6 minutes until they begin to soften.
  3. Toss in chopped kale along with a splash of water. Cover the pan with a lid and steam for another 2-3 minutes until veggies are just tender yet vibrant. Season with salt and pepper.
  4. Serve hot as a side dish or enjoy it on its own with quinoa, rice, or your choice of protein.
