  • 2 cups heavy whipping cream

  • 1/2 cup Parmigiano-Reggiano cheese (grated)
  • 2 pounds frozen cut leaf spinach (thawed and squeezed dry)

Instructions

  1. Thaw the frozen spinach using a microwave or overnight in the refrigerator. Squeeze out excess water.
  2. In a large pot over medium-low heat, melt the butter. Add shallots and sauté for about 4 minutes until soft. Stir in garlic and cook for another minute without browning.
  3. Pour in heavy cream, salt, pepper, and nutmeg; bring to a low boil while stirring occasionally for about 10 minutes.
  4. Stir in grated Parmigiano-Reggiano cheese until melted.
  5. Fold in the prepared spinach until well combined. Serve warm.
