  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder (optional)
  • Salt and pepper, to taste
  • 1 cup tomato puree
  • 1 cup heavy cream
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken with salt and pepper. In a large skillet, melt butter and oil over medium heat. Add chicken and cook until browned (5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté the chopped onion until translucent. Add minced garlic and ginger; cook until fragrant.
  3. Stir in garam masala, cumin, paprika, and chili powder. Toast for 30 seconds.
  4. Add tomato puree and return the chicken to the skillet. Stir in heavy cream, yogurt, and lemon juice; simmer on low for about 10 minutes until thickened.
  5. Prepare golden fries as directed (or make homemade fries) while the chicken simmers.
  6. Serve warm with naan for dipping.
