- In the same skillet, melt remaining butter over medium heat. Sauté minced garlic until fragrant.
- Add heavy cream and bring to a gentle simmer. Stir in Velveeta until melted.
- Mix in mozzarella until thick and creamy; adjust consistency with reserved pasta water as needed.
- Toss cooked rotini into the sauce until evenly coated and serve with seared chicken on the side.
