- 12 oz fettuccine pasta
- 2 chicken breasts, sliced
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 1/2 cups grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook fettuccine in a large pot of boiling salted water until al dente; drain, reserving about 1 cup of pasta water.
- In a skillet over medium heat, heat olive oil. Sauté sliced chicken seasoned with salt and pepper until golden brown and cooked through (about 6–8 minutes). Remove from skillet.
- In the same skillet, sauté minced garlic until fragrant. Add heavy cream and whole milk; mix well.
- Gradually stir in grated Parmesan cheese until melted and creamy.
- Return the cooked chicken to the skillet along with fresh spinach. Mix in the cooked fettuccine and gradually add reserved pasta water to achieve desired consistency.
