  • 12 oz fettuccine pasta
  • 2 chicken breasts, sliced
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 1/2 cups grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook fettuccine in a large pot of boiling salted water until al dente; drain, reserving about 1 cup of pasta water.
  2. In a skillet over medium heat, heat olive oil. Sauté sliced chicken seasoned with salt and pepper until golden brown and cooked through (about 6–8 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and whole milk; mix well.
  4. Gradually stir in grated Parmesan cheese until melted and creamy.
  5. Return the cooked chicken to the skillet along with fresh spinach. Mix in the cooked fettuccine and gradually add reserved pasta water to achieve desired consistency.
  6. Adjust seasoning if necessary and serve warm.
