- 400g chicken breast, cubed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 finely chopped onion
- 2 garlic cloves, minced
- 2 cups diced carrots
- 1 cup peas (fresh or frozen)
- 1 tbsp curry powder
- 1 tsp paprika
- 1 cup chicken stock
- 1 cup heavy cream
- Salt and pepper to taste
- 1 cup basmati rice
- 3 cups water
Instructions
- Rinse basmati rice under cold water until clear. In a saucepan, combine rice, water (3 cups), and salt. Bring to boil, reduce heat to low, cover, and simmer for about 15 minutes.
- Season cubed chicken with salt and pepper. In a large skillet over medium heat, add olive oil and brown chicken on all sides (5-7 minutes). Remove from skillet.
- In the same skillet, melt butter; sauté onion and garlic until fragrant (about 2 minutes). Add diced carrots; cook for another 3-4 minutes.
- Stir in curry powder, paprika, and tomato paste. Pour in chicken stock; bring to simmer. Gradually add heavy cream while stirring until combined. Simmer for about 5 minutes.
- Return the chicken to the skillet along with peas; stir gently until heated through (3-4 minutes).
- Fluff cooked rice with a fork and serve the creamy chicken mixture over it. Garnish with chopped parsley.
