  • 1 large Onion
  • 3 cloves Garlic
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans
  • 2 medium Potatoes (diced)
  • 1 cup Heavy Cream (or coconut milk)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt (adjust to taste)
  • 0.5 tsp Black Pepper (adjust to taste)

Instructions

  1. Dice the onion and potatoes; mince the garlic.
  2. In a large pot over medium heat, brown the ground beef for about 5–7 minutes.
  3. Add diced onion and minced garlic; sauté until onion is translucent.
  4. Stir in diced tomatoes, corn, black beans, potatoes, spices, and broth; bring to a simmer.
  5. Cover and let simmer on low heat for about 20 minutes until potatoes are tender.
  6. Remove from heat and stir in heavy cream (or coconut milk) until well combined.
