  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups water or vegetable broth
  • 1 tablespoon butter or plant-based alternative
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

Instructions

  1. Rinse the rice under cold water until clear. In a medium saucepan, combine rinsed rice, water (or vegetable broth), butter, thyme, and parsley; bring to a boil.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken for 6–7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Add chicken broth and lemon juice; simmer for about 2 minutes.
  4. Reduce heat to low, stir in heavy cream, and return cooked chicken to the skillet. Simmer for another 5 minutes.
  5. Once rice has absorbed all liquid (about 15–20 minutes), fluff it with a fork before serving alongside the creamy chicken.
