  • 1/4 cup white sugar
  • 1/2 cup butter, melted
  • 11 ounces softened cream cheese
  • 1 1/2 cups confectioners’ sugar
  • 3 tablespoons milk
  • 16 ounces cool whip or homemade whipped cream
  • 2 cups raspberries (fresh or frozen)
  • 2 tablespoons cornstarch for raspberry sauce
  • 1/2 cup white sugar for raspberry sauce
  • 1/2 cup water for raspberry sauce

Instructions

  1. Prepare the crust by mixing crushed graham crackers, sugar, and melted butter in a bowl. Press firmly into a springform pan.
  2. For the filling, beat cream cheese until smooth. Gradually add confectioners’ sugar, then milk and vanilla extract. Fold in cool whip until creamy.
  3. Spread filling over the crust evenly. Cover and refrigerate for at least four hours.
  4. Make the raspberry sauce by heating cornstarch, sugar, water, and raspberries in a saucepan until thickened.
  5. Serve chilled cheesecake drizzled with raspberry sauce.
