- 1 medium onion, diced
- 2 large cloves garlic, minced
- 5 cups chicken broth
- 1 cup sauerkraut, drained
- 3 medium Yukon gold potatoes, diced
- ½ cup heavy cream
- 2 cups cooked corned beef, chopped
- 1 cup Swiss cheese, shredded
Instructions
- In a large pot, melt butter over medium heat. Add diced onion and sauté until softened (about 5 minutes). Stir in minced garlic and red pepper flakes; cook for an additional minute.
- Sprinkle flour over the onions and stir to coat evenly. Cook for about 3 minutes.
- Gradually pour in chicken broth while scraping the bottom of the pot. Add potatoes, sauerkraut, Worcestershire sauce, pickling spices, caraway seeds, and bay leaves; stir to combine.
- Bring to a boil then reduce to simmer for 12–15 minutes or until potatoes are tender. Remove bay leaves.
- Stir in heavy cream and add chopped corned beef. Adjust seasoning with salt and black pepper as needed.
- Serve in bowls topped with shredded Swiss cheese.
