  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel (tomatoes with green chilies)
  • 3 cups chicken broth
  • 1 block (8 oz) cream cheese, softened
  • 1 cup heavy cream (or half & half)
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: tortilla chips, avocado, sour cream, cilantro

Instructions

  1. In a large pot over medium heat, brown the ground beef with the diced onion until fully cooked. Drain any excess grease.
  2. Add minced garlic and taco seasoning; stir well to coat the meat.
  3. Mix in diced tomatoes, black beans, corn, Rotel, and chicken broth; bring to a simmer.
  4. Reduce heat to low and add softened cream cheese, stirring until smooth.
  5. Pour in heavy cream (or half & half) and shredded cheddar cheese; stir until creamy and blended.
  6. Adjust seasoning with salt and pepper before serving hot.
