  • 170 g digestive biscuits
  • 100 g melted butter
  • 900 g cream cheese (softened)
  • 200 g caster sugar
  • 160 g sour cream
  • 1 ½ teaspoons vanilla extract
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for topping)

Instructions

  1. Preheat oven to 180°C (350°F). Crush digestive biscuits and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Beat cream cheese and caster sugar until smooth. Mix in sour cream, vanilla extract, salt, and gently fold in beaten eggs until just combined.
  3. Pour filling over the cooled crust and bake in a water bath for about 60 minutes or until slightly jiggly in the center.
  4. Cool in oven with door ajar for an hour, then refrigerate for at least 4 hours. Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch.
