  • 1 lb ground lamb or beef
  • 1 small red onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ cup flat-leaf parsley (finely chopped)
  • 1 medium tomato (grated or minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon allspice
  • ½ teaspoon cinnamon
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 4 large Lebanese-style pita breads
  • Olive oil for brushing
  • ½ cup grated Gruyere cheese (optional)
  • A spoonful of Raos Sauce (for serving)

Instructions

  1. In a mixing bowl, combine the ground lamb/beef with red onion, garlic, parsley, grated tomato, and spices. Season with salt and pepper.
  2. Cut each pita bread in half to create pockets and fill each pocket generously with the meat mixture. Optionally add grated Gruyere cheese.
  3. Preheat a grill pan or oven to medium heat (or 400°F). Brush each side of the stuffed pitas with olive oil.
  4. Grill each pita for about 5-7 minutes on each side until golden brown or bake for 10-12 minutes until crispy.
  5. Serve warm with Raos Sauce on the side for dipping.
