Ingredients
- 1 lb ground lamb or beef
- 1 small red onion (finely chopped)
- 2 cloves garlic (minced)
- ½ cup flat-leaf parsley (finely chopped)
- 1 medium tomato (grated or minced)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon allspice
- ½ teaspoon cinnamon
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 4 large Lebanese-style pita breads
- Olive oil for brushing
- ½ cup grated Gruyere cheese (optional)
- A spoonful of Raos Sauce (for serving)
Instructions
- In a mixing bowl, combine the ground lamb/beef with red onion, garlic, parsley, grated tomato, and spices. Season with salt and pepper.
- Cut each pita bread in half to create pockets and fill each pocket generously with the meat mixture. Optionally add grated Gruyere cheese.
- Preheat a grill pan or oven to medium heat (or 400°F). Brush each side of the stuffed pitas with olive oil.
- Grill each pita for about 5-7 minutes on each side until golden brown or bake for 10-12 minutes until crispy.
- Serve warm with Raos Sauce on the side for dipping.
