Ingredients
- 2 slices Turkey Bacon (cooked, drained, and finely sliced)
- 1 large yellow onion (diced)
- 1 cup carrots (thinly sliced)
- ¾ cup celery (diced)
- 1 tsp salt
- 1½ tsp black pepper
- 4 tsp garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp dried parsley
- 1 tbsp tomato paste
- 2 (15 oz) cans crushed tomatoes
- 2 (15 oz) cans cannellini beans (drained and rinsed)
- 4 cups low sodium chicken broth
- 6 cups water
- 1 (16 oz) box of ditalini pasta (uncooked)
- 1 cup Parmesan Reggiano
Instructions
- In a large skillet over medium heat, cook turkey bacon until crispy. Drain excess fat and slice it into small pieces before adding them to the slow cooker.
- Add onions, carrots, celery, salt, pepper, garlic, thyme, basil, parsley, tomato paste, crushed tomatoes, cannellini beans, chicken broth, and water into the slow cooker. Stir until well combined.
- Cover your slow cooker and set it on low for 7–8 hours or high for 4–5 hours. About 30 minutes before serving time, add the uncooked ditalini pasta.
