  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil (optional)
  • 1/4 tsp dried thyme (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and paprika.
  2. Optional: Sear each chicken breast in olive oil over medium-high heat for about 2–3 minutes on each side until golden brown.
  3. Place the seasoned chicken in the crockpot. In a mixing bowl, whisk together the chicken broth, cream of chicken soup, and thyme if using; pour this mixture over the chicken.
  4. Cook on low for about 6 hours or high for about 3 hours.
  5. About 30 minutes before serving, mix cornstarch with water until smooth and stir into the crockpot to thicken the gravy.
  6. Shred or keep the chicken whole before serving; garnish with parsley.
