Ingredients
- 1 medium onion
- 2 tbsp olive oil
- 3.5 cups vegetable broth
- 1 medium jalapeño pepper
- 1 cup corn
- 3/4 cup dried red lentils
- 15 ounces tomato sauce
- 1 medium bell pepper (any color)
- 15 ounces black beans
- 15 ounces red beans
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 cup dairy-free cream cheese
- Salt to taste
- Pepper to taste
- Crushed tortilla chips for garnish
- Sliced avocado for garnish
- Diced jalapeños for garnish
- Chopped red onion for garnish
- Shredded cheddar for garnish
- Fresh cilantro for garnish
Instructions
- Wash and chop all vegetables: onion, bell pepper, and jalapeño.
- In the slow cooker, combine chopped onion and bell pepper with olive oil.
- Add vegetable broth and all remaining ingredients except garnishes. Stir well.
- Set slow cooker on low for about 8 hours or high for 4 hours until lentils are tender.
- After cooking, taste and adjust seasoning with salt and pepper as needed before serving hot topped with desired garnishes.
