Ingredients
- 1 1/4 lbs chicken breast (diced)
- 12 oz gluten-free farfalle
- 2 cups dairy free heavy cream
- 4 tbsp dairy free butter
- 2 cups chicken broth
- 8 oz dairy free parmesan (shredded)
- Chopped spinach
- 1 3/4 tsp sweet smoked paprika
- 1 1/2 tsp oregano
- 1 1/2 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp minced onion
- 2 tsp Italian seasoning
- 1 2/3 tbsp gluten free 1:1 flour
- 2 tbsp pasta water (as needed)
Instructions
- Boil gluten-free farfalle in salted water until al dente. Drain and reserve some pasta water.
- In a bowl, season diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, salt, and black pepper.
- Heat olive oil in a skillet over medium heat and sear the seasoned chicken until fully cooked (about 3–4 minutes per side). Set aside.
- In the same skillet, melt dairy free butter and sauté minced onion briefly. Add Italian seasoning, garlic powder, and salt; simmer for one minute.
- Whisk in gluten-free flour followed by chicken broth and dairy free heavy cream until smooth. Stir in chopped spinach; simmer until thickened (3–4 minutes).
- Mix in shredded dairy free parmesan until melted, then combine with cooked pasta and chicken. Adjust sauce consistency with reserved pasta water if needed.
