  • 1 1/4 lbs chicken breast (diced)
  • 12 oz gluten-free farfalle
  • 2 cups dairy free heavy cream
  • 4 tbsp dairy free butter
  • 2 cups chicken broth
  • 8 oz dairy free parmesan (shredded)
  • Chopped spinach
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 2/3 tbsp gluten free 1:1 flour
  • 2 tbsp pasta water (as needed)

Instructions

  1. Boil gluten-free farfalle in salted water until al dente. Drain and reserve some pasta water.
  2. In a bowl, season diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, salt, and black pepper.
  3. Heat olive oil in a skillet over medium heat and sear the seasoned chicken until fully cooked (about 3–4 minutes per side). Set aside.
  4. In the same skillet, melt dairy free butter and sauté minced onion briefly. Add Italian seasoning, garlic powder, and salt; simmer for one minute.
  5. Whisk in gluten-free flour followed by chicken broth and dairy free heavy cream until smooth. Stir in chopped spinach; simmer until thickened (3–4 minutes).
  6. Mix in shredded dairy free parmesan until melted, then combine with cooked pasta and chicken. Adjust sauce consistency with reserved pasta water if needed.
