  • 6 Oz Onion, Chopped
  • 7 Oz Carrots, Slivered
  • 7 Oz Celery, Diced
  • 24 Oz Canned Diced Tomatoes
  • 2 Cups Red Kidney Beans, Cooked
  • 2 Cups White Kidney Beans, Cooked
  • 44 Oz Beef Stock
  • 11/2 Tsp Oregano
  • 11/4 Tsp Fresh Black Pepper
  • 1 Tbsp Fresh Flat-Leaf Parsley
  • 1 Tsp Tabasco-Type Hot Sauce
  • 24 Oz Marinara Sauce
  • 4 Oz Dry Small Pasta (Shells, Elbows, Ditalini, Or Other)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef; cook until browned.
  3. Stir in onion, carrots, and celery; sauté until slightly tender.
  4. Add diced tomatoes; mix well.
  5. Incorporate rinsed beans and pour in beef stock.
  6. Season with oregano and black pepper; stir to combine.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
