  • 500 g beef mince
  • 1 onion, chopped

  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 1 tbsp dark brown sugar
  • 3 tbsp tomato puree
  • 1 beef stock cube, crumbled
  • 100 ml boiling water
  • Salt and freshly ground black pepper
  • 4 large tortillas
  • 250 g microwave rice pouch (Mexican-flavored if possible)
  • 200 g fresh salsa
  • 400 g black beans, drained and rinsed
  • 125 g grated mozzarella

Instructions

  1. Heat sunflower oil in a skillet over medium heat.
  2. Add beef mince and cook until browned for about 5 minutes.
  3. Stir in chopped onion, chili powder, paprika, cumin, and dark brown sugar; cook for an additional 5 minutes.
  4. Mix in tomato puree, crumbled beef stock cube, boiling water, salt, and pepper; cover and simmer for 15 minutes until thickened.
  5. Warm tortillas according to package instructions and prepare microwave rice as directed.
  6. Assemble each burrito by layering rice, beef mixture, fresh salsa, black beans, and mozzarella on tortillas before rolling tightly.
